Step‑by‑Step Instructions for Zucchini Pizza Casserole
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the shredded zucchini with salt and allow to rest for about 10 minutes.
  3. Squeeze out as much liquid as possible from the zucchini using a kitchen towel or cheesecloth.
  4. In a mixing bowl, combine the drained zucchini, eggs, Parmesan cheese, and half of the mozzarella cheese.
  5. Grease the baking dish thoroughly and press the zucchini mixture evenly into the bottom.
  6. Bake the crust for 20 minutes until set and lightly browned around the edges.
  7. Cook ground beef and chopped onion in a skillet over medium heat until browned, about 6-8 minutes.
