- Preheat your oven to its highest temperature, ideally around 475°F (245°C). If using a pizza stone, place it on the middle rack to heat for at least 30 minutes.
- Cut fresh mozzarella into ½-inch pieces. Pat dry with paper towels to remove excess moisture.
- Stretch out your easy pizza dough into a rectangle or circle about 9x13 inches, creating a nice edge for the crust.
- In a glass jar, combine extra virgin olive oil, a splash of water, chopped parsley, minced garlic, lemon zest, salt, and black pepper. Seal and shake to mix.
- Transfer the shaped dough onto a baking sheet lined with parchment paper. Dimple the surface and pour the herb brine over the dough.
- Sprinkle mozzarella over the brine-soaked dough. Slide the pizza onto the preheated stone or baking sheet in the oven. Bake for 8-10 minutes.
- Remove the pizza, drizzle with fresh lemon juice, sprinkle grated parmesan, parsley, and black pepper. Slice and serve immediately.
