  • 1/4 cup Fresh Basil and Parsley (Chopped) use liberally
  • 1 Lemon (Zested and Juiced)

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent and fragrant.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes, until aromatic but not browned.
  3. Add the halved cherry tomatoes and crushed red pepper flakes. Cook for about 4-5 minutes, allowing the mixture to thicken.
  4. Gently fold in the rinsed butter beans, and warm through for about 2 minutes.
  5. Pour in the vegetable broth and bring to a gentle simmer for about 5 minutes.
  6. Reduce heat and stir in heavy cream and Parmesan cheese. Simmer for another 3-4 minutes until thickened.
  7. Taste and season with salt and pepper, adjusting as needed.
  8. Fold in chopped fresh basil, parsley, lemon zest, and juice.
  9. Spoon into bowls, garnishing with more Parmesan cheese and fresh herbs as desired.
