  3. Transfer dough into a 9-inch tart pan, press evenly, and bake for 35-40 minutes until edges are golden.
  4. Cut the warm dough into 16 squares while still warm and let cool in the pan.
  5. Whisk together powdered sugar and grapefruit juice to achieve a smooth icing. Adjust consistency as desired.
  6. Dip cooled cookies in icing and allow excess to drip off. Garnish with thyme or pearl sugar if desired.
