Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and gather a greased 9x13-inch baking dish.
  2. In a large mixing bowl, toss the boneless, skinless chicken pieces with salt, pepper, and garlic powder.
  3. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and brown the seasoned chicken for about 4 minutes.
  4. In a separate bowl, whisk together the brown sugar, low-sodium soy sauce, pineapple juice, rice vinegar, ground ginger, and cornstarch until smooth.
  5. Place the browned chicken and pineapple chunks into the greased baking dish. Pour the glaze over and gently stir to combine. Cover with foil and bake for 25-30 minutes.
  6. Remove the foil and bake for an additional 5-10 minutes to thicken the sauce and achieve caramelization.
