Juicing and Making Syrup
- Wash 1 cup of Florida strawberries, remove tops, and blend until smooth. Strain through a fine mesh sieve to separate juice from pulp.
- Combine the strawberry juice, ½ cup of sugar, and 2 tablespoons of lemon juice in a saucepan. Add 4-5 basil leaves. Heat until boiling, then simmer for about 5 minutes.
- Strain the syrup through a fine mesh sieve into a clean container and cool for about 15 minutes.
Assembling the Spritzer
- In a tall glass, pour 2 tablespoons of the cooled strawberry syrup and fill with 8 ounces of chilled carbonated water, gently stirring to combine.
- Garnish with whole strawberries and a sprig of fresh basil. Serve immediately.
