  • 1 tablespoon Lime Juice Freshly squeezed is preferred.
  • 2 tablespoons Soy Sauce Use tamari for gluten-free option.
  • 1/4 cup Water Adjust for desired consistency.
Salad
  • 8 ounces Thin Rice Noodles Rice sticks or pad thai noodles can be used.
  • 1 cup Cucumber Sliced.
  • 1 cup Purple Cabbage Shredded.
  • 1 medium Carrot Grated or thinly sliced.
  • 1 cup Red Pepper Sliced.
  • 1 handful Cilantro Fresh.
  • 1 handful Fresh Mint Can be replaced with basil.
  • 1/2 cup Peanuts Optional topping; can substitute with cashews.

Method
 

Preparation
  1. Cook the Noodles: Boil water and add thin rice noodles, cooking for 4-5 minutes. Drain, rinse with cold water, and cool completely.
  2. Make the Dressing: Mix peanut butter, hoisin sauce, lime juice, soy sauce, and water in a bowl until smooth. Adjust consistency with more water if needed.
  3. Combine Ingredients: In a salad bowl, add cooled noodles, cucumber, purple cabbage, carrot, and red pepper. Toss in cilantro and mint. Pour dressing and mix well.
  4. Garnish and Serve: Sprinkle chopped peanuts before serving. Adjust flavor with lime or additional soy sauce as needed.
