Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together maple syrup, soy sauce, sriracha, minced garlic, and chili flakes.
  3. Season the chicken with salt and pepper. Sear in olive oil for 2-3 minutes per side.
  4. Transfer chicken to a baking dish and pour marinade over it.
  5. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  6. While the chicken bakes, combine jasmine rice, coconut milk, chicken broth, and salt in a saucepan. Bring to a boil, then cover and simmer for 18-20 minutes.
  7. Let chicken rest before serving. Spoon remaining sauce over the chicken.
  8. Fluff the coconut rice and serve alongside the chicken, garnished with cilantro and lime wedges.
