Cucumber Salad Preparation
  1. In a mixing bowl, combine the thinly sliced cucumbers and red onion. Drizzle with apple cider vinegar, then sprinkle in salt, pepper, and sugar-free sweetener. Toss thoroughly for even coating and set aside for about 10 minutes to allow the flavors to meld.
Ground Beef Preparation
  1. Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook for 5-7 minutes until browned.
  2. Reduce the heat to medium and add minced garlic and sesame oil. Sauté for 1-2 minutes until fragrant.
  3. Stir in soy sauce (or coconut aminos), sugar-free sweetener, rice vinegar, crushed red pepper flakes, and ground ginger. Cook for an additional 2-3 minutes, stirring until well combined.
  4. Remove skillet from heat and fold in half of the sliced green onions and half of the sesame seeds.
  5. Plate the spicy Korean ground beef, garnishing with the remaining green onions and sesame seeds.
