Cucumber Salad Preparation
- In a mixing bowl, combine the thinly sliced cucumbers and red onion. Drizzle with apple cider vinegar, then sprinkle in salt, pepper, and sugar-free sweetener. Toss thoroughly for even coating and set aside for about 10 minutes to allow the flavors to meld.
Ground Beef Preparation
- Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook for 5-7 minutes until browned.
- Reduce the heat to medium and add minced garlic and sesame oil. Sauté for 1-2 minutes until fragrant.
- Stir in soy sauce (or coconut aminos), sugar-free sweetener, rice vinegar, crushed red pepper flakes, and ground ginger. Cook for an additional 2-3 minutes, stirring until well combined.
- Remove skillet from heat and fold in half of the sliced green onions and half of the sesame seeds.
- Plate the spicy Korean ground beef, garnishing with the remaining green onions and sesame seeds.
