- Preheat Your Skillet: Begin by placing a cast-iron skillet over medium-high heat. Allow it to heat for about 5 minutes; flicking a few drops of water onto the surface will cause them to sizzle, indicating it's ready.
- Prepare the Tortillas: While the skillet heats, lightly brush the outside of your large flour tortillas with mayonnaise.
- Add the Ground Beef: Take a quarter of your ground beef and press it onto one side of each tortilla. Season the beef generously with salt, pepper, and garlic powder.
- Cook the Quesadillas: Carefully place each tortilla, beef-side down, into the preheated skillet. Cook for about 2-3 minutes, or until the underside is golden brown and crispy.
- Flip and Add Cheese: With the underside perfectly crisped, sprinkle a generous amount of shredded cheese on the beef side, then fold the tortilla in half.
- Finish Cooking: Cook the folded quesadilla for an additional 1-2 minutes on each side, pressing down gently with the spatula.
- Rest and Slice: Once cooked, remove the quesadilla from the skillet and let it rest for 1-2 minutes on a cutting board. After resting, cut it into wedges.
