  • 2 tbsp Rice Vinegar
  • 1/4 cup Light Soy Sauce Can use Tamari for gluten-free
  • 1 tbsp Brown Sugar Coconut sugar is a healthier alternative
  • 1/4 cup Water
For the Vegetables
  • 2 cloves Garlic Minced
  • 1 tbsp Ginger Minced
  • 1 medium White Onion Chopped
  • 1 medium Bell Pepper Chopped
For Cooking
  • 2 tbsp Peanut Oil Can use vegetable oil

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the cut boneless skinless chicken thighs with vegetable oil and salt. Toss and let marinate for about 10 minutes.
  2. Sprinkle cornstarch over the marinated chicken and toss until completely coated.
  3. Preheat your air fryer to 450°F. Arrange the coated chicken pieces in the air fryer basket and lightly spray with oil. Air fry for 8 minutes, flip, and cook an additional 5-6 minutes until golden and crispy.
  4. In a bowl, whisk together the sauce ingredients until fully incorporated.
  5. In a skillet, heat peanut oil over medium heat. Sauté garlic and ginger until fragrant, then add onion and bell pepper, cooking until softened.
  6. Stir the sauce into the skillet with the vegetables, cook until thickened, then add the air-fried chicken, coating it with the sauce.
