  • 1 cup half-and-half can substitute with heavy cream or non-dairy alternative
  • 4 oz feta cheese crumbled for better texture
  • 2 small limes for juicing; use lemon if needed
For Garnishing
  • Fresh cilantro provides a fresh herbal note, can be omitted

Step-by-Step Instructions
  1. Heat a large skillet over medium heat and add olive oil. Season shrimp with chili powder and salt. Cook for 3-4 minutes until pink and opaque, then remove and set aside.
  2. In the same skillet, melt salted butter over medium heat. Add chopped onion and a pinch of salt. Sauté for about 4 minutes until onions are translucent.
  3. Stir in minced garlic and sauté for an additional 2 minutes. Avoid burning the garlic.
  4. Add cooked corn kernels and smoked paprika to the skillet. Stir to combine and allow to warm through for about 2 minutes.
  5. Pour in half-and-half, stirring gently. Bring to a simmer, then add crumbled feta cheese and allow it to melt.
  6. Squeeze lime juice into the sauce and return the cooked shrimp to skillet. Mix well and garnish with cilantro before serving.
