Method
 

Steps
  1. In a large mixing bowl, cream together butter and Parmesan cheese using a hand mixer until light and fluffy, about 3 minutes.
  2. Gradually add flour, rosemary, cracked black pepper, and lemon zest until the dough just comes together.
  3. Gather the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. Once chilled, roll the dough out to about 1/4 inch thick and cut out shapes using a snowflake cookie cutter.
  5. Place the cookies on a parchment-lined baking sheet and chill in the refrigerator for 10 minutes.
  6. Preheat oven to 350°F (175°C) and bake cookies for 12 to 15 minutes until golden brown.
  7. Transfer baked cookies to a wire rack and let cool completely before serving.
