- Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
- Cut the cauliflower into uniform bite-sized florets.
- In a large bowl, coat the florets evenly with cornstarch.
- Spread coated florets on the baking sheet and drizzle with vegetable oil. Bake for 25-30 minutes, flipping halfway through.
- In a medium saucepan, combine soy sauce, honey or maple syrup, rice vinegar, minced garlic, ginger, and sesame oil. Cook for about 5-7 minutes.
- Once roasted, transfer the cauliflower to a bowl and pour the sauce over, tossing to coat.
- Serve in bowls and garnish with green onions and sesame seeds.
