Steps

  3. Drizzle with olive oil and add minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper. Toss until well-coated.
  4. Optionally, salt the zucchini and let it sit for about 10 minutes before mixing with chicken and onion.
  5. Spread the mixture evenly in the greased baking dish in a single layer.
  6. Bake for 25-30 minutes, until chicken reaches 165°F (75°C) and zucchini is fork-tender.
  7. Broil for an additional 2-3 minutes for a golden finish.
