Step-by-Step Instructions for Baked Salmon with Spinach
  1. Heat olive oil in a skillet over medium heat. Add sliced onions and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for an additional 30 seconds until fragrant.
  2. Stir in thawed and drained spinach, cooking for 2-3 minutes until warmed through. Season with salt and pepper, then incorporate sour cream.
  3. Preheat your oven to 175°C (347°F). Pat salmon fillets dry and season with salt and pepper. Sear each fillet for about 2 minutes on medium heat until lightly browned.
  4. Grease a baking dish with olive oil, place the seared salmon fillets skin-side down, and layer the creamy spinach mixture over each fillet. Sprinkle mozzarella on top.
  5. Bake in the preheated oven for 15-20 minutes until cheese bubbles and turns golden, and the salmon is opaque with an internal temperature of 63°C (145°F).
