  • 1/2 cup Fresh Lime Juice Fresh juice is recommended.
  • 1/4 cup Simple Syrup Adjust based on sweetness preference.
For the Fizz
  • 2 cups Club Soda Add last to maintain fizz.
For the Rim
  • 3 tablespoons Sugar and Kosher Salt Mixture Evenly coat the rim.
For Garnishing
  • 2 pieces Lime Wedges Add as garnish or for extra flavor.

Method
 

Preparation
  1. Moisten the rim of each glass with a lime wedge and dip into the sugar and kosher salt mixture.
  2. In a pitcher, mix together prickly pear syrup, fresh lime juice, and simple syrup. Stir for about 30 seconds.
  3. Adjust sweetness of the mixture to preference by adding more syrup if needed.
  4. Fill the prepared glasses with ice cubes, about three-quarters full.
  5. Pour the mocktail mixture into each glass over the ice.
  6. Top each glass with a splash of club soda and stir lightly if desired.
  7. Garnish each drink with a lime wedge on the rim and serve immediately.
