Ingredients
  

For the Kofta
  • 1 lb Ground Beef Substitutable with ground chicken or lamb
  • 1 medium Onion Grated
  • 1/4 cup Fresh Herbs (parsley, cilantro) Fresh herbs recommended
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Adjust to taste
For the Potatoes
  • 4 medium Potatoes Use sweet potatoes for a hint of sweetness
For the Sauce
  • 1/2 cup Tahini Gluten-free certified tahini recommended
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Lemon Zest
  • 2 Tbsp Olive Oil Can substitute with neutral oil
  • 2 cloves Garlic Minced

Method
 

Preparation Steps
  1. In a large bowl, combine the ground beef, grated onion, fresh herbs, and spices. Mix thoroughly by hand, being careful not to overwork the meat.
  2. With your hands, form the kofta mixture into elongated patties or meatballs, approximately the size of your palm. Place them on a tray.
  3. Preheat your oven to 350°F (175°C). Slice the potatoes into thin rounds. Drizzle with olive oil and season with salt and pepper.
  4. Arrange the kofta on top of the potatoes in the baking dish and bake for 25-30 minutes until browned and cooked through.
  5. While baking, whisk together tahini, lemon juice, minced garlic, and water or olive oil until smooth.
  6. After the first bake, drizzle the tahini sauce over the kofta and potatoes, then return to the oven for an additional 10-15 minutes.
