- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a mixing bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- In a separate bowl, beat together ¾ cup of softened unsalted butter, ½ cup of granulated sugar, and ¾ cup of brown sugar until light and fluffy.
- Add 2 large eggs one at a time, beating well after each addition, and then add in 1 teaspoon of pure vanilla extract.
- Gradually add the dry mixture to the wet ingredients, mixing on low until just combined.
- Fold in 1 cup of caramel chips and ½ cup of chocolate chips if desired.
- Scoop tablespoons of dough onto the baking sheets, spacing them about 2 inches apart, and sprinkle with flaky sea salt.
- Bake for 10 to 12 minutes until edges are golden brown and centers are soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
