- Preheat your oven to 400°F (200°C) and gather your ingredients.
- Combine diced onion, chopped red bell pepper, uncooked parboiled brown rice, fajita seasoning, and optional cayenne pepper in the baking dish. Mix well.
- In a separate bowl, whisk together chicken broth, mild green chilies, tomato paste, and olive oil. Pour over the rice and vegetable mixture.
- Stir in shredded chicken, rinsed black beans, and corn. Mix thoroughly.
- Cover the baking dish with foil and bake for 65 to 70 minutes until liquid is absorbed and rice is tender.
- Remove the foil and sprinkle shredded cheese on top. Bake uncovered for an additional 5 to 10 minutes until melted and golden.
