  • 1 medium Onion finely diced yellow or white onion
  • 1 medium Red Bell Pepper or green bell pepper
  • 1.5 cups Uncooked Parboiled Long-Grain Brown Rice can be replaced with long-grain white rice
  • 2 tablespoons Fajita Seasoning homemade or store-bought
  • 1/4 teaspoon Cayenne Pepper optional
  • 1 cup Corn Kernels frozen or canned
  • 1 can Low Sodium Black Beans drained and rinsed
  • 2 cups Shredded Chicken rotisserie or freshly cooked
  • 2 cups Reduced Sodium Chicken Broth
  • 1 can Mild Green Chilies or diced jalapeños
  • 2 tablespoons Olive Oil omit for lighter version
  • 2 tablespoons Tomato Paste or fresh diced tomatoes
  • 2 cups Shredded Monterey Jack Cheese or cheddar/pepper jack

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and gather your ingredients.
  2. Combine diced onion, chopped red bell pepper, uncooked parboiled brown rice, fajita seasoning, and optional cayenne pepper in the baking dish. Mix well.
  3. In a separate bowl, whisk together chicken broth, mild green chilies, tomato paste, and olive oil. Pour over the rice and vegetable mixture.
  4. Stir in shredded chicken, rinsed black beans, and corn. Mix thoroughly.
  5. Cover the baking dish with foil and bake for 65 to 70 minutes until liquid is absorbed and rice is tender.
  6. Remove the foil and sprinkle shredded cheese on top. Bake uncovered for an additional 5 to 10 minutes until melted and golden.
  7. Let cool for 5 to 10 minutes before serving. Garnish as desired.
