Ingredients

For the Fajitas
  • 24 oz Salsa Choose your preferred level of spiciness
  • 1 Red Bell Pepper (sliced) Replace with orange or yellow for a milder taste
  • 1 Yellow Bell Pepper (sliced) Feel free to omit for less sweetness
  • 1 Green Bell Pepper (sliced) Contributes a slight bitterness
  • 1 Large Yellow Onion (thinly sliced) White or red onion can serve as substitutes
  • 6 Garlic Cloves (minced) Adjust according to your garlic preferences
  • 2 lb Chicken Breast (sliced into 1-inch strips) Chicken thighs can be a juicier alternative
  • 1 Packet Fajita Seasoning A must for that authentic flavor profile
  • 2 tbsp Lime Juice Adding it towards the end preserves the chicken's tenderness
  • 1 tsp Chili Powder Feel free to adjust the amount for your preferred spice level

Equipment

  • Slow Cooker

Method

Step-By-Step Instructions
  1. Begin by preparing your ingredients; slice the chicken breasts into 1-inch strips, and slice the red, yellow, and green bell peppers into thin strips. Thinly slice the yellow onion and mince the garlic cloves.
  2. In the bottom of a spacious crockpot, pour half of the salsa to create a flavorful base. Next, layer half of the sliced bell peppers and the yellow onion over the salsa.
  3. Gently place the sliced chicken breast over the vegetable layer, ensuring it's spread out evenly for consistent cooking.
  4. Sprinkle the fajita seasoning packet and the chili powder over the chicken, ensuring every piece is well-coated.
  5. Pour the remaining salsa over the chicken and vegetables, followed by the rest of the sliced peppers and onions. Finally, squeeze the lime juice over the top.
  6. Cover the crockpot with its lid and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  7. Once cooked, use two forks to shred the chicken in the pot, mixing it well with the vibrant vegetables.
