  • 1 teaspoon Fresh Ginger Finely grated
  • 1 clove Garlic Minced
Optional Garnishes
  • Sesame Seeds For sprinkling on top

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Toss the eggplant cubes with olive oil, salt, and pepper on a baking sheet.
  3. Roast the eggplant for 20-25 minutes, flipping halfway through.
  4. While roasting, whisk together the miso glaze ingredients in a bowl.
  5. Once the eggplant is tender, coat with the miso glaze.
  6. Return to the oven and roast for an additional 5-7 minutes.
  7. Garnish with sesame seeds and green onions before serving.
