Ingredients
  

For the Casserole
  • 3 cups cooked chicken diced or shredded
  • 8 oz cream cheese softened
  • 1 cup cottage cheese
  • 1 cup sour cream or plain Greek yogurt
  • 1/2 cup mayonnaise
  • 10.5 oz cream of chicken soup
  • 1/2 cup Parmesan cheese grated
  • 2 cups mozzarella cheese shredded, for topping
For the Topping
  • 1 cup Ritz crackers crushed
  • 1/4 cup unsalted butter melted
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
For Garnish
  • 1 tablespoon fresh parsley chopped, optional

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, cottage cheese, sour cream, mayonnaise, and cream of chicken soup. Stir until smooth and creamy.
  3. Add garlic powder, onion powder, salt, and pepper into the mixture and mix thoroughly.
  4. Gently fold in the cooked chicken.
  5. Grease a 9x13-inch baking dish. Pour the chicken mixture into the dish and spread it evenly.
  6. Sprinkle grated Parmesan cheese over the top.
  7. In a separate bowl, mix crushed Ritz crackers with melted butter until coated.
  8. Spread the cracker mixture evenly over the top of the casserole.
  9. Sprinkle shredded mozzarella cheese on top of the cracker layer.
  10. Bake for 25-30 minutes until the topping is golden brown and the edges are bubbling.
  11. Allow to cool for about 10 minutes before serving.
  12. Garnish with fresh parsley if desired before serving.
