Step-by-Step Instructions
  1. Preheat your oven to 275°F (135°C). Trim excess fat from the ribs and pat dry. Season generously with salt and pepper.
  2. Heat a skillet over medium-high heat, add oil, and sear the ribs for 3-4 minutes on each side until golden crust develops.
  3. In a bowl, whisk together soy sauce, hoisin, mirin, brown sugar, minced garlic, ginger, and optional chili flakes until sugar dissolves.
  4. Transfer the seared ribs to a Dutch oven. Pour marinade over the ribs, add sliced onion and green onion, cover, and roast for 3-4 hours.
  5. Remove ribs from the oven, pour braising liquid into a skillet, and simmer for 10-15 minutes until it thickens into a glaze.
  6. For a caramelized edge, broil the ribs for 2-3 minutes on a baking sheet until sticky crust forms.
  7. Serve over steamed rice, noodles, or roasted vegetables, drizzle with glaze, and garnish with sliced green onions.
