  • 1/2 cup Mango purée Substitute with peach or apricot purée
For the Strawberry Jam
  • 1/2 cup Strawberry jam Any berry jam can be used
For the Frosting
  • 2 cups Powdered sugar No substitutes recommended
  • 1/2 cup Heavy cream Can use full-fat coconut milk

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with colorful cupcake liners.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then add vanilla, milk, and mango purée.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fill the lined muffin tin with batter and bake for 18-20 minutes.
  7. Cool cupcakes in the tin for 5 minutes, then transfer to a wire rack.
  8. Fill cooled cupcakes with strawberry jam using a piping bag.
  9. Beat together butter and powdered sugar, then mix in the cream and vanilla.
  10. Divide frosting into three portions, mixing with mango and strawberry purées.
  11. Pipe layered frosting on each cupcake to create a sunset effect.
  12. Garnish with fresh fruit slices before serving.
