- Preheat toaster or oven to a light toast setting. Toast bread slices for about 3-4 minutes until golden brown.
- In a mixing bowl, scoop out the flesh of the avocado and add lemon juice. Mash until creamy with some chunks remaining.
- Spread the mashed avocado mixture evenly on one side of each bread slice.
- Thinly slice the cucumber and layer the slices over the avocado spread on one slice of bread.
- Add leafy greens over the cucumber, followed by thin slices of red onion.
- If using cherry tomatoes, halve and scatter them over the greens and onions.
- Sprinkle fresh herbs over the filling and drizzle with olive oil or preferred sandwich spread.
- Place the other slice of bread on top, avocado side down, press gently and slice in half to serve.
