For the Filling
  • 1 Avocado ripe but not overripe
  • 1 medium Cucumber thinly sliced
  • 1 handful Fresh leafy greens options like lettuce, spinach, or arugula
  • 1/2 cup Cherry tomatoes (optional) halved
  • 1 medium Red onion thinly sliced
  • 1 handful Fresh herbs e.g., dill, basil, or cilantro
For Flavoring
  • 1 tablespoon Lemon juice to prevent browning
  • to taste Salt and pepper for seasoning
  • Olive oil or favorite sandwich spread (optional) e.g., flavored cream cheese or hummus

Method
 

Step‑by‑Step Instructions
  1. Preheat toaster or oven to a light toast setting. Toast bread slices for about 3-4 minutes until golden brown.
  2. In a mixing bowl, scoop out the flesh of the avocado and add lemon juice. Mash until creamy with some chunks remaining.
  3. Spread the mashed avocado mixture evenly on one side of each bread slice.
  4. Thinly slice the cucumber and layer the slices over the avocado spread on one slice of bread.
  5. Add leafy greens over the cucumber, followed by thin slices of red onion.
  6. If using cherry tomatoes, halve and scatter them over the greens and onions.
  7. Sprinkle fresh herbs over the filling and drizzle with olive oil or preferred sandwich spread.
  8. Place the other slice of bread on top, avocado side down, press gently and slice in half to serve.
