Preparation Steps
- Preheat your oven to 350°F (177°C). Prepare your baking pan by lining it with parchment paper.
- Beat together the softened unsalted butter and brown sugar until creamy. Add vanilla extract and mix well. Gradually stir in flour, baking powder, salt, and oats until crumbly.
- Press slightly more than half of the crumble mixture into the bottom of the prepared pan and bake for 12 minutes.
- Whisk together the sweetened condensed milk, fresh lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the crust, spreading it evenly. Sprinkle the remaining crumble mixture on top.
- Bake for an additional 22–25 minutes, until edges are golden brown and center appears set.
- Allow to cool completely before lifting from the pan and cutting into bars.
