  3. Gradually add sugar, increasing mixer speed to high, until the mixture is glossy and stiff peaks form.

  5. Transfer meringue to a piping bag and pipe into small clusters on the prepared baking sheets.
  6. Bake for 20 minutes until set and lightly crisp, then leave in the oven with the door cracked for 30 minutes.
