Step-by-Step Instructions
  1. Boil 4 cups of filtered water in a medium saucepan over high heat.
  2. Add 2 tablespoons of Kashmiri or Himalayan green tea and boil for 5 minutes.
  3. Stir in 1/2 teaspoon of baking soda and continue boiling for 2 minutes.
  4. Add 1-2 star anise, 2 crushed cardamom pods, and 1 cinnamon stick, boil for 1 minute.
  5. Reduce heat and simmer for 20-30 minutes, stir occasionally.
  6. Stir in 1/4 teaspoon of salt to enhance flavors.
  7. Gradually pour in 2 cups of whole milk, stirring continuously.
  8. Watch for the chai to change to a soft pink color, then remove from heat.
  9. Strain the chai into cups to separate spices and tea leaves.
  10. Sweeten with sugar or honey and garnish with crushed nuts if desired.
