Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped onion, cilantro, diced jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper.
  3. Gently fold in the shredded cheddar cheese and crushed tortilla chips.
  4. Crack an egg into the mixture and mix well.
  5. Roll into golf-ball-sized meatballs, about 1.5 inches in diameter.
  6. Heat olive oil in an ovenproof skillet and sear the meatballs for about 5 minutes.
  7. Pour the canned Mexican-style tomatoes with green chilies over the meatballs.
  8. Transfer the skillet to the oven and bake for 15-20 minutes.
  9. Let the meatballs rest for a few minutes, then serve hot garnished with fresh lime wedges.
