  • 1 cup Warm Milk not hot
  • 2 teaspoons Instant Dry Yeast
  • 4 cups All-Purpose Flour measured by weight
  • 1/4 cup Granulated Sugar adjust to taste
  • 1 teaspoon Salt
  • 1 large Egg room temperature
  • 1/2 cup Unsalted Butter very soft
Filling Ingredients
  • 2 cups Fresh or Frozen Strawberries
  • 1/4 cup Granulated Sugar for filling
  • 1 tablespoon Lemon Juice
Glaze Ingredients
  • 8 ounces Cream Cheese softened
  • 1/4 cup Unsalted Butter softened
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Strawberry Puree from filling, cold

Method
 

Preparation
  1. In a medium saucepan over medium heat, combine strawberries, granulated sugar, and lemon juice. Cook for about 10 minutes until thickened, then blend smooth and refrigerate.
  2. In a stand mixer, combine flour, sugar, salt, and yeast. Add warm milk, butter, and egg. Knead for 5-7 minutes until smooth and elastic.
  3. Transfer dough to a greased bowl, cover, and let rise in a warm spot for about 2 hours until doubled in size.
  4. Roll out the dough into a rectangle. Spread the chilled strawberry filling evenly and roll up tightly. Slice into 12 pieces.
  5. Place sliced rolls in a greased baking dish, cover, and let rise for another 30-60 minutes until puffy. Preheat oven to 350°F (180°C).
  6. Bake for 20-25 minutes until golden brown. Let cool in pan for 10 minutes.
  7. Beat together cream cheese, butter, powdered sugar, vanilla, and strawberry puree until smooth. Adjust consistency as needed.
  8. Spread the glaze over warm rolls and serve immediately.
