- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and kosher salt until well combined. Set aside.
- In another bowl, beat the softened butter, light brown sugar, and granulated sugar until light and fluffy. Add honey, egg, and vanilla extract; mix until smooth.
- Gradually add the dry mixture to the wet ingredients, stirring gently. Fold in toasted sesame seeds. Cover and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C). Scoop and roll the chilled dough into balls. Optionally, roll tops in additional sesame seeds. Place on a baking sheet.
