Ingredients

For the Filling
  • 8 oz Cream Cheese This is the creamy base that adds richness; be sure to soften it for a smooth texture.
  • 1/2 cup Sour Cream Provides a tangy creaminess that complements the cream cheese perfectly.
  • 1/2 cup Diced Pickles These add a delightful crunch and tang; just make sure they’re drained well to avoid moisture.
  • 1 cup Shredded Cheddar Cheese Enhances the flavor with a sharp bite; choose a good quality for the best results.
  • 1 tsp Garlic Powder This gives the filling depth; a little goes a long way in flavor.
  • 2 tbsp Pickle Juice Adds a strong pickle flavor to the mix, accentuating the overall taste.
  • 2 tbsp Fresh Dill For a fresh herb note; dried dill works too if you're in a pinch.
For the Wrapper
  • 12 slices Bacon This is the star of the show; opt for center-cut for an evenly cooked and crispy texture.
Optional
  • 12 pieces Toothpicks Use these to secure your roll-ups; they’re helpful but not necessary if the bacon holds its shape.

Equipment

  • mini muffin tin

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. In a mixing bowl, beat softened cream cheese until fluffy. Add sour cream, diced pickles, shredded cheddar cheese, garlic powder, pickle juice, and fresh dill. Mix well.
  3. Cut bacon strips in half lengthwise.
  4. Lay a half strip of bacon on a surface. Place about 1 tablespoon of the filling at one end and roll the bacon around it. Secure with a toothpick if desired.
  5. Place each bacon roll-up upright in the greased muffin tin.
  6. Bake for 40-45 minutes or until the bacon is crispy and golden brown.
  7. Let cool for 3-5 minutes, then garnish with dill or pickle slices before serving.
