- Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
- In a mixing bowl, beat softened cream cheese until fluffy. Add sour cream, diced pickles, shredded cheddar cheese, garlic powder, pickle juice, and fresh dill. Mix well.
- Cut bacon strips in half lengthwise.
- Lay a half strip of bacon on a surface. Place about 1 tablespoon of the filling at one end and roll the bacon around it. Secure with a toothpick if desired.
- Place each bacon roll-up upright in the greased muffin tin.
- Bake for 40-45 minutes or until the bacon is crispy and golden brown.
- Let cool for 3-5 minutes, then garnish with dill or pickle slices before serving.
