Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and baking dishes.
  2. Rinse the sushi rice under cold water until the water runs clear. Combine with water and cook until tender.
  3. Whisk together rice vinegar, sugar, and salt until dissolved. Fold into the cooked sushi rice.
  4. Spread the seasoned sushi rice evenly in the bottom of a 9x13-inch baking dish.
  5. In a mixing bowl, combine diced salmon, mayonnaise, Sriracha, sesame oil, and green onions. Stir until well mixed.
  6. Spread the salmon mixture over the sushi rice evenly.
  7. Bake for 25-30 minutes until the top is golden brown and bubbling.
  8. Remove from oven, let cool for a few minutes, and garnish with extra green onions, nori strips, and tobiko.
