Step-by-Step Instructions
  1. In a shallow bowl, pour in 1/2 cup of extra virgin olive oil and 1/4 cup of balsamic vinegar. Stir them together gently using a whisk or fork.
  2. Finely chop a handful of parsley and basil leaves, about 2 tablespoons of each, then add them to the oil mixture. Next, chop 1/4 cup each of Castelvetrano and Kalamata olives, and mix them in.
  3. Grate 1 to 2 cloves of garlic directly into the mixture. Sprinkle in 1 teaspoon of dried oregano and a pinch of flaky sea salt. Stir thoroughly.
  4. Grate 1/4 cup of fresh Parmesan cheese and add it to the bowl, blending it well with the mixture.
