- Preheat your oven to 400°F (200°C).
- Season the chicken thighs generously with salt, pepper, and garlic powder on both sides.
- In an oven-proof pan, heat olive oil over medium-high heat and sear the chicken thighs for about 3 minutes per side.
- Remove excess fat, then add minced garlic and sauté for about 30 seconds until fragrant.
- Whisk together honey, wholegrain mustard, Dijon mustard, and water; pour over the chicken thighs in the pan.
- Add quartered baby red potatoes to the pan, stirring them in to soak up the sauce and season lightly with salt and pepper.
- Bake in the oven for 40-45 minutes, until the chicken is cooked through and the potatoes are fork-tender.
- If using, add green beans after 30 minutes of baking and return to the oven for an additional 15 minutes.
