Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs generously with salt, pepper, and garlic powder on both sides.
  3. In an oven-proof pan, heat olive oil over medium-high heat and sear the chicken thighs for about 3 minutes per side.
  4. Remove excess fat, then add minced garlic and sauté for about 30 seconds until fragrant.
  5. Whisk together honey, wholegrain mustard, Dijon mustard, and water; pour over the chicken thighs in the pan.
  6. Add quartered baby red potatoes to the pan, stirring them in to soak up the sauce and season lightly with salt and pepper.
  7. Bake in the oven for 40-45 minutes, until the chicken is cooked through and the potatoes are fork-tender.
  8. If using, add green beans after 30 minutes of baking and return to the oven for an additional 15 minutes.
