  • 1 teaspoon Garlic Powder swap for minced fresh garlic if desired
For the Toppings
  • ¼ cup Fresh Parsley or fresh mint
  • ½ medium Red Onion or green onions if preferred
  • ½ cup Feta Cheese or goat cheese as a substitute

Method
 

Preparation Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the Yukon Gold potatoes into 1/3-inch wide sticks.
  3. Soak the cut potato sticks in cold water for 10-15 minutes, then dry thoroughly.
  4. In a mixing bowl, toss the potato sticks with olive oil, salt, oregano, dill, black pepper, and garlic powder.
  5. Line a baking sheet with parchment paper and spread the seasoned fries in a single layer.
  6. Bake the fries for 15 minutes, flip them, and continue baking for another 6-8 minutes until golden brown.
  7. Transfer to a serving plate and sprinkle with parsley, red onion, and feta cheese.
  8. Serve warm with tzatziki, aioli, or lemon wedges.
