Ingredients
  

For the Soup Base
  • 2 lbs Boneless Skinless Chicken Thighs Tender and juicy
  • 6 cloves Garlic thinly sliced
  • 3 inches Ginger peeled and finely chopped
  • 4 tsp Kosher Salt adjust according to taste
  • 1 tsp Freshly Ground Black or White Pepper add to taste
  • 10 cups Water or low-sodium chicken broth
For the Noodles & Vegetables
  • 8 oz Dried Ramen Noodles or Dried Curly Noodles
  • 1 cup Carrot cut into thin matchsticks
For the Flavor Boost
  • 6-8 oz Scallions thinly sliced, divided
  • 1/4 cup Black Rice Vinegar can swap with white wine vinegar
  • 1/4 cup Soy Sauce adjust for saltiness
  • 2 tbsp Toasted Sesame Oil can omit if not available
  • Crispy Chili Oil optional for extra kick

Method
 

Instructions
  1. In a large pot, add water, chicken thighs, garlic, ginger, and scallion whites. Sprinkle in salt and pepper. Bring to a boil.
  2. Once boiling, reduce heat to medium-low and simmer uncovered for about 15 minutes.
  3. In a small bowl, whisk together rice vinegar, soy sauce, and sesame oil. Set aside.
  4. Carefully remove chicken, shred it, and return it to the pot along with noodles and carrots.
  5. Cook noodles and carrots according to package directions, usually about 3-4 minutes.
  6. Give the pot a stir to combine everything. Taste and adjust seasonings if needed.
  7. Ladle soup into bowls, garnish with scallion greens and drizzle with sauce. Add chili oil if desired.
