  • 1 lb Ground Beef or ground turkey or chicken
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 10 oz Frozen Spinach, thawed and drained or fresh spinach
  • 14.5 oz Diced Tomatoes canned or fresh
  • 1 cup Ricotta Cheese or cottage cheese
  • 1 cup Mozzarella Cheese, shredded or provolone
  • 1/4 cup Parmesan Cheese, grated or nutritional yeast
  • 1 tbsp Italian Seasoning or a mixture of oregano and basil
  • Salt & Pepper to taste
  • 1/2 cup Breadcrumbs or crushed crackers

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes until no longer pink.
  3. Add the chopped onion and minced garlic to the skillet, sauté for 3-4 minutes until translucent.
  4. Stir in the thawed spinach and diced tomatoes, then add ricotta, mozzarella, Parmesan, Italian seasoning, salt, and pepper; cook for another 5 minutes.
  5. Transfer the mixture to a greased 9x13-inch baking dish and top with breadcrumbs.
  6. Bake in the preheated oven for 25-30 minutes until the top is golden and bubbly.
