Garlic Shrimp Mofongo Instructions
  1. Begin by peeling the green plantains and cutting them into 1-inch slices. Set aside.
  2. Heat olive oil in a skillet over medium heat. Fry plantain slices for 4-5 minutes per side until golden brown.
  3. In the same skillet, reduce heat and add butter and olive oil. Sauté minced garlic for 1 minute.
  4. Add shrimp, season with salt, pepper, and paprika. Cook for about 3-4 minutes until pink and opaque.
  5. Pour in chicken broth and simmer for 2 minutes. Stir in lime juice and chopped cilantro.
  6. Mash fried plantains until creamy, mix in crumbled bacon if using.
  7. Shape the mashed plantains into a dome or bowl shape.
  8. Serve by topping the molded mofongo with garlic shrimp and sauce.
