Method
 

Step‑by‑Step Instructions
  1. Pat steaks dry, season with salt, pepper, thyme, and rosemary. Heat skillet with olive oil and sear steaks for 3-4 minutes per side until golden-brown.
  2. Reduce heat, add butter and minced garlic to skillet, stirring until garlic is fragrant. Remove from heat.
  3. Peel and slice russet potatoes, toss with half garlic butter, salt, pepper, and herbs.
  4. Layer half the potatoes in a baking dish, then sliced steaks, and half the cheddar cheese.
  5. Top with remaining potatoes, drizzle with garlic butter, and add remaining cheese.
  6. Cover with foil and bake at 375°F for 40 minutes. Remove foil and bake an additional 15 minutes.
  7. Let sit for 10 minutes before serving.
