Step-by-Step Instructions
  1. In a medium bowl, combine 1 cup of plain Greek yogurt, 1/2 cup of natural peanut butter, 2-3 tablespoons of honey or maple syrup, 1/2 teaspoon of vanilla extract, and a pinch of sea salt. Stir vigorously for about 2-3 minutes until the mixture is smooth and creamy.
  2. Line a baking sheet with parchment paper to prevent the bites from sticking.
  3. Using a spoon or a cookie scoop, drop small portions of the creamy mixture onto the prepared baking sheet, leaving about 1 inch of space between each scoop.
  4. Sprinkle mini chocolate chips on top of each scoop or drizzle melted dark chocolate over the mixture if desired.
  5. Place the baking sheet in the freezer and let the bites freeze for 2-3 hours until solid.
  6. Once frozen, transfer the bites to a freezer-safe container or zip-top bag, separating layers with parchment paper.
  7. Enjoy the bites straight from the freezer, allowing them to sit at room temperature for 3-5 minutes before consuming.
