  • 1 can Whole Kernel Corn drained
  • 1 medium Red Bell Pepper finely diced
  • 1 cup Shredded Mexican Blend Cheese
  • 1/2 cup Mayonnaise light mayo optional
  • 1/4 teaspoon Black Pepper freshly cracked
  • 2 ounces Chili Cheese Fritos crushed
  • 1/4 cup Fresh Cilantro optional garnish

Method
 

Step-by-Step Instructions
  1. Drain the whole kernel corn in a colander to remove excess moisture. Finely dice the red bell pepper.
  2. In the same mixing bowl, add shredded Mexican blend cheese, mayonnaise, and freshly cracked black pepper to the corn and bell pepper. Gently fold together until evenly coated.
  3. Just before serving, fold in crushed Chili Cheese Fritos, stirring gently to maintain their crunch.
