Chicken Preparation
  1. In a large bowl, combine olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper to create a rich marinade. Add the chicken and coat well. Marinate for at least 30 minutes or overnight for best flavor.
  2. Preheat your grill or a non-stick skillet over medium-high heat. Add olive oil to prevent sticking.
  3. Cook the marinated chicken on the grill or skillet for 5-7 minutes on each side, until golden brown and internal temperature reaches 165°F (75°C).
  4. Whisk together mayonnaise, minced garlic, lemon juice, and salt in a small bowl for the garlic sauce. Adjust flavor to taste.
  5. Let the chicken rest for 5 minutes after cooking. Slice into strips for serving.
