Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion, 2 minced garlic cloves, and 1 diced bell pepper. Sauté for about 5 minutes until the vegetables soften.
  2. Stir in 1 pound of shrimp and your seafood mix, cooking for another 3-4 minutes until the shrimp turns pink and opaque.
  3. Lower the heat slightly and add 8 ounces of cream cheese, stirring continuously for 2-3 minutes until melted.
  4. Pour in 4 cups of vegetable broth and add 1 can of drained beans. Stir well and bring to a gentle simmer for about 5 minutes.
  5. Once simmering, add salt, pepper, and cayenne pepper to taste. Cook for an additional 10 minutes while stirring occasionally.
