- Remove the stems from about two cups of fresh, ripe strawberries. Blend on high until smooth, about 1-2 minutes.
- Set a fine mesh strainer over a pot and pour the blended mixture into it. Press the pulp to extract juice, about 3-5 minutes.
- Stir in honey, then sprinkle gelatin over the juice and allow it to bloom for 3 minutes.
- Heat the mixture on low for about 4 minutes, stirring continuously until smooth and gelatin is dissolved.
- Pour the mixture into silicone molds, making sure to do it promptly to avoid thickening.
- Transfer molds to the refrigerator and chill for at least 4 hours until set.
