  • 3 tablespoons Honey Adjust based on sweetness preference
  • 2 tablespoons Gelatin High-quality, grass-fed for best results

Method
 

Step-by-Step Instructions
  1. Remove the stems from about two cups of fresh, ripe strawberries. Blend on high until smooth, about 1-2 minutes.
  2. Set a fine mesh strainer over a pot and pour the blended mixture into it. Press the pulp to extract juice, about 3-5 minutes.
  3. Stir in honey, then sprinkle gelatin over the juice and allow it to bloom for 3 minutes.
  4. Heat the mixture on low for about 4 minutes, stirring continuously until smooth and gelatin is dissolved.
  5. Pour the mixture into silicone molds, making sure to do it promptly to avoid thickening.
  6. Transfer molds to the refrigerator and chill for at least 4 hours until set.
