Preparation Steps
- Combine pitted and halved fresh sweet cherries with maple syrup. Toss gently and refrigerate for at least 15 minutes.
- In a bowl, whip chilled dairy-free whipped cream on medium speed until light and fluffy, about 3-5 minutes. Refrigerate until serving.
- Blend ripe avocado, maple syrup, melted dairy-free chocolate, dairy-free milk, Dutch-process cocoa powder, vanilla extract, espresso powder, and salt until smooth. Chill in the refrigerator for 30 minutes.
- Layer the dessert in serving glasses starting with avocado chocolate mousse, followed by whipped cream, then macerated cherries with syrup. Repeat until cups are filled.
- Serve immediately or cover with plastic wrap and refrigerate. Best enjoyed within six hours.
