Method
 

Preparation Steps
  1. Combine pitted and halved fresh sweet cherries with maple syrup. Toss gently and refrigerate for at least 15 minutes.
  2. In a bowl, whip chilled dairy-free whipped cream on medium speed until light and fluffy, about 3-5 minutes. Refrigerate until serving.
  3. Blend ripe avocado, maple syrup, melted dairy-free chocolate, dairy-free milk, Dutch-process cocoa powder, vanilla extract, espresso powder, and salt until smooth. Chill in the refrigerator for 30 minutes.
  4. Layer the dessert in serving glasses starting with avocado chocolate mousse, followed by whipped cream, then macerated cherries with syrup. Repeat until cups are filled.
  5. Serve immediately or cover with plastic wrap and refrigerate. Best enjoyed within six hours.
