Preparation
- In a small bowl, whisk together 2 tablespoons of low-sodium soy sauce, 1 tablespoon of Thai chili sauce, 1 tablespoon of toasted sesame oil, and 1 teaspoon of Chinese 5-spice powder. Set aside.
- Heat a large skillet over medium-high heat, add 1 pound of ground beef, and cook for 5–7 minutes until browned.
- Add 2 minced garlic cloves and 1 tablespoon of grated fresh ginger, stirring for another 2 minutes until fragrant.
- Pour the sauce mixture into the skillet, stir to coat, and cook for 3–4 minutes until the sauce thickens.
- Warm tortillas in a skillet or soak rice paper sheets in warm water for 15 seconds.
- Place a portion of the beef mixture in the center, top with fresh herbs, cucumbers, green onions, and peanuts, then roll tightly.
- For the dipping sauce, whisk together honey, ketchup, chili paste, lime juice, rice vinegar, and grated ginger and garlic.
- Serve the rolls warm with the dipping sauce.
