Ingredients
  

For the Burger Mixture
  • 2 cups Cooked Lentils Brown or green lentils for best results
  • 2 cups Fresh Spinach Can substitute with kale or swiss chard
  • 1 cup Breadcrumbs Use ground oats or gluten-free breadcrumbs for gluten-free
  • 1/2 cup Parmesan Cheese Optional; omit for a dairy-free version
  • 1 medium Chopped Onion Shallots can be used for a milder flavor
  • 2 cloves Minced Garlic
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika Regular paprika can be used if preferred
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Adjust to taste
  • 1 large Egg For vegan, replace with 1 tbsp ground flaxseed or chia seeds mixed with 3 tbsp water
  • 2 tablespoons Olive Oil Can substitute with vegetable oil if needed

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine cooked lentils, chopped spinach, breadcrumbs, Parmesan (if using), onion, garlic, cumin, smoked paprika, salt, and pepper. Use a fork to mash the lentils slightly to help bind the mixture. This should take about 5 minutes.
  2. Stir in the large egg until fully incorporated. If the mixture appears too wet, gradually add more breadcrumbs until it holds together well. This should take around 3 minutes.
  3. Divide the mixture into four equal parts and gently shape them into patties about 1-inch thick. This shaping step will take roughly 5 minutes.
  4. In a large skillet, heat about 2 tablespoons of olive oil over medium heat. Allow the oil to shimmer, indicating it’s hot enough to cook the burgers thoroughly. This should take about 2 minutes.
  5. Carefully place the patties in the skillet and sauté for about 4-5 minutes on each side, or until they turn golden brown and are heated through.
  6. Once cooked, remove the burgers from the skillet and allow them to rest for a minute. Serve on buns with your favorite toppings.
