Step-by-Step Instructions
  1. Bring cream cheese and butter to room temperature (about 15 minutes). Gather necessary ingredients.
  2. Combine softened cream cheese, butter, powdered sugar or erythritol, and lemon zest in a medium bowl. Blend with a hand mixer on medium speed for 2-3 minutes until smooth.
  3. Transfer mixture to a shallow container. If too soft, freeze for 10-15 minutes until firm enough to scoop. Shape into bite-sized balls.
  4. Place truffle balls on a parchment-lined plate and refrigerate for at least 30 minutes until firm.
  5. Melt white chocolate chips in a microwave-safe bowl. Dip chilled truffles in melted chocolate and set them back on the parchment paper to harden.
